Cooking with Cathy: Healthy-Splurge Breakfast Burrito

Ingredients

INGREDIENTS:
1-lb. hot breakfast sausage from Dominion Farms dfmeats.com
1 cup white onion, chopped
2 large fresh jalapeno peppers, seeded and chopped
2 medium Roma tomatoes, diced
4 cups All Whites 100% egg whites
1-16 oz. jar Chef Cathy's Awesome Salsa
1 cup Skim-Milk Mozzarella cheese, shredded
1 package Garden Fresh Flour Tortillas
1 TBS. extra virgin olive oil

Directions

DIRECTIONS:
In a large skillet over medium heat, cook sausage in oil. Stir occasionally. Cook for 6 to 7 minutes. Add onions, jalapeno, and tomatoes. Stir and cook for 2 minutes. Add eggs and stir to incorporate. Add cheese and turn off heat. Fill flour tortilla with sausage and egg mixture and top with Chef Cathy's Awesome Salsa. Roll tortilla and enjoy!
