New Sugar Free Oatmeal Cookies

Ingredients


  • 1/2 cup fructose
  • 1/4 cup water
  • 1 cup Splenda
  • 2 egg whites
  • 1/4 cup canola oil
  • 1 package dry Butter Buds
  • 1 cup oat or whole wheat flour
  • 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/8 tsp. salt
  • 3 cups dry oats (either quick cooking or old fashioned)
  • 1/2 cup dried plums/prunes chopped
  • 1 tsp. vanilla
  • ***Optional: ½ cup chopped nuts
  • ***Optional: ½ cup sugar free chocolate chips

    Directions

    Heat oven to 350. Mix water and fructose in a microwave bowl. Microwave on high until mixture boils and begins to turn yellow. While fructose is cooking, mix together all other ingredients. Pour fructose syrup in last and mix by hand. Spoon onto non-stick sprayed cookie sheet 2 inches apart. Bake 12 to 15 minutes until set and beginning to lightly brown. Remove from cookie sheet onto waxed paper. May sprinkle Nutra Sweet on top for added sweetness. When cool, store in air tight container.
