Grilled Fish with Spring Sauce



  • 1 Roma tomato
  • 2 sprigs cilantro
  • 1 bell pepper, sliced
  • 1 zucchini squash, sliced
  • juice of lime
  • 2 tbs. extra virgin olive oil
  • 2 tsp lemon pepper
  • 1/4 tsp. dried basil


In a medium sauce pan over medium heat, add oil and all ingredients except lime juice. Sautee for 2-3 minutes. Don’t let vegetables become soggy! Just before removing from heat, add lime juice. Spoon spring sauce over your favorite fish and enjoy.

For grilled fish, place tuna, cod, Halibut or Salmon in 2 tbs. of extra virgin olive oil over medium heat. Add ½ tsp. of garlic powder, 1/8 tsp. lemon pepper and 1/8 tsp. Cayenne. Cook until flakey.
