Zucchini Pie

Ingredients


  • 4 cups of sliced prepared zucchini, cooked until tender crisp
  • tablespoon lemon juice
  • dash of salt
  • 1 ¼ cup sugar
  • 1 ½ teaspoon cinnamon
  • 1 ½ teaspoon of cream of tarter
  • 3 tablespoons flour
  • dash of nutmeg


Directions

Toss together the zucchini, lemon juice and salt. Mix the remaining ingredients in a bowl, then combine. Put in 9” pie shell, top with a second pie shell. Dot with butter and bake at 400 degrees for 40 minutes.
