Pot Pie Sandwich

Ingredients


  • 2 TBS. extra virgin olive oil

  • 1 lb. lean ground meat

  • 2 mild Italian sausages

  • 1 small green pepper, diced

  • 1 small white onion, diced

  • 2 cups sliced mushrooms

  • 1 TBS. garlic powder

  • 1 can cream of mushroom soup

  • 1 cup shredded cheese

  • 1 can giant, flaky biscuits

  • Dried parsley for garnish

Directions

Over medium heat, cook meats in olive oil. Add garlic powder and cook until done -- about 5 minutes. Add all other ingredients and cook another 5 minutes.



Flatten biscuits into large circles, spoon meat into center. Cover with second flattened biscuit and use fork to seal the sides. Bake at 375 until biscuits are brown and fluffy.



Cathy's tip of the week: Spray sides of biscuits with non-stick cooking spray to keep fork from sticking to biscuits.
