Late Summer Pasta

I hope everyone enjoyed their end of summer holiday. We had a fabulous time out by the pool with friends and family. A lot of grilling took place and I wanted to share one of the many recipes I did over the long holiday weekend. My bid to a great and exciting summer. Enjoy!

Ingredients


  • 1 zucchini squash, sliced about 1" thick

  • 1 yellow squash, sliced about 1" thick

  • 2 roma tomatoes, diced with seeds

  • 1 red onion, sliced

  • 1 cup fresh corn

  • 2 TBS. fresh cilantro

  • 1/2 cup fresh lime juice

  • 2 TBS. extra virgin olive oil

  • Boneless, skinless chicken breast or large shrimp

  • 1 pkg sun dried tomato pasta

  • 1 tsp. garlic powder

  • 2 cups grated Parmesan

Directions

Cook pasta according to package. Over a hot grill or in a large skillet, grill chicken or shrimp using 1 TBS. oil and lime juice. Slice chicken or chop shrimp and set aside. Using remaining oil, saute? all the vegetables with garlic powder. Add the cilantro after 3 minutes. Fold cilantro into vegetables. Add your choice of meat and toss. Sprinkle with grated Parmesan cheese. Spoon over pasta.



Tip of the week: To keep pasta from drying out add 2 TBS. of Italian dressing after cooking.
