Holiday Layered Potatoes

Happy November everyone! Where in the world has the year gone? Just seems like yesterday Charlie and I were busy cooling off from the 100 degree days. Yet we are three and a half weeks away from Thanksgiving. With that in mind, whether we like it or not, it's time to start on our holiday menus. So this week, lets do a new potato recipe. I'm tired of the same mashed potatoes every year, so I started playing and came up with this wonderfully easy recipe, Enjoy!!

Ingredients


  • 12 large red potatoes, washed and sliced 1/2 inch thick

  • 2 cups diced ham

  • 1 cup chopped green chilies

  • 12 pieces crisp bacon, crumbled

  • 24 oz sour cream

  • 4 cups shredded cheddar cheese

  • 1/2 tsp black pepper

  • 1/2 tsp salt

  • 1/2 tsp garlic powder


Directions

Spray a 9x13 " pan with cooking spray. Place potatoes on the bottom. It is ok to layer them if needed. In a large bowl, combine all other ingredients and mix well. Spoon the sour cream mixture over the red potatoes. Top with cheese. Bake at 350, uncovered for 30-45 minutes or until cheese is golden brown. Let dish rest for 5 minutes before serving.
