Lamb Chops with Raspberry Spice Jam


1/4 cup of white wine
1 tbs. worcestershire sauce
a pinch of salt and pepper
raspberrry jam
1/4 tsp. cayenne pepper
1 tbs. extra virgin olive oil


Marinate lamb in wine, Worcestershire sauce, salt and pepper for 15 minutes.
Heat oil in a small skillet over medium heat; add lamb searing both sides for 3 to 4 minutes each.
Remove from pan and let rest 5 minutes.

Put 3 tbs. of jam in a medium sauce pan with the wine and cayenne pepper; bring to a boil.

Drizzle sauce over lamb and serve with a tossed salad.

Don't overcook the lamb! Lamb is usually served medium to medium rare.
