Sugar Free Chocolate Peanut Butter Cookies


` 2/3 cups whole wheat flour (oat or part soy)
1 cup fructose
2/3 cup splenda
1 1/2 tsp. baking powder
1/2 cup cocoa
1/4 teaspoon salt
1/3 cup all natural peanut butter (room temperature)
2 egg whites
1/4 cup canola oil
1/3 cup coffee (may substitute milk or water)


Stir ingredients together. May need extra liquid. Spray waxed paper with non stick spray. Place on waxed paper by teaspoonfuls and flatten with hand or a flat cup sprayed with non stick spray. Microwave 6 cookies 1 minute. Remove from oven by sliding paper onto a plate. Remove from paper. Cool. Enjoy. May keep cookie dough in a plastic bag or rolled in waxed paper in the refrigerator for quick snacks.
