Grilled Chicken Wrap
4 large whole wheat tortillas
2 cups of sliced chicken breast
1/2 cup green enchilad sauce
2 cups cooked brown rice
1 cup low fat shredded Cheddar cheese
1 cup chopped cilantro
Grill chicken breast with desired seasoning (recommended rub-Kosher salt, course black pepper, cumin, chili powder, fresh garlic).
Cook brown rice according to package instructions.
Divide all ingredients equally over tortillas, wrap and serve.
Vegetarian substitution: black beans instead of chicken.
Serve with sliced cucumber or fresh fruit. Serves 4.
