Living Lean Mushroom Quesidillas
Vegetable Spray or 2tbs Butter in pan
8 oz sliced mushrooms (various kinds work well together)
1/2 medium onion, sliced
1 tsp. bottled minced garlic or fresh garlic cloves
3 TBS. chopped fresh cilantro
3 8-inch whole wheat flour tortillas
6 TBS. shredded low fat Monterey jack cheese with jalapeno peppers or low fat cheddar cheese
Pre heat oven to 350 degrees
Spray on large skillet with vegetable oil or butter, Cook mushrooms and garlic in skillet over medium heat until onion is tender about 5 to 7 minutes. Stir in cilantro and remove from heat.
Arrange 1/3rd of mushroom mixture on half of one tortilla. Sprinkle with 2 TBS of cheese. Fold the other half of the tortilla over cheese. Place on a baking sheet. Repeat with remaining ingredients. (You can also warm the tortilla in a skillet over low heat just to melt cheese)
In oven bake quesadillas about 5 minutes or until filling is hot and cheese is melted. Cut into 4 wedges and serve with salsa.
