It's Mardi Gras time! That means, we're gong cajun this week. This is one of those wonderful recipes that works for any occasion, but since Fat Tuesday is around the corner, I thought it would be fun to share this with you. Enjoy!
1 box long grain and wild rice
1 can chicken stock
1/2 green pepper, finely chopped
1 small onion, finely chopped
2 celery stalks, finely chopped
1 lb spicy sausage
4 TBS extra virgin olive oil
1 lb. large shrimp
2 TBS cajun seasoning
In a large pot over high heat, cook rice in chicken stock. In a large skillet over medium- high heat, cook sausage with the "trinity" (pepper, onion and celery). Drain rice and place in a large bowl. Season shrimp in cajun seasoning and add to sausage mixture. Stir in incorporate. Pour sausage and shrimp mixture over rice. YUM!
Tip of the week: Be creative with this recipe. You can use chicken legs, smoked sausage or chorizo
