1 pkg prewashed spring mix salad
1 small zuccinni squash, diced
1 carton sundried tomato crumbled feta cheese
1 small red pepper, diced
2 TBS pine nuts
1/2 small red onion, sliced
1 pkg precooked mesquite smoked chicken
10 grape tomatoes
Spicy Honey Mustard Dressing
2 TBS spicy mustard
2 TBS yellow mustard
2 TBS honey
1/4 tsp. garlic powder
In a small bowl, stir together mustard, honey and garlic powder. Pour dressing into the bottom of a larger bowl. Add all other ingredients. Chill salad for 30 minutes. Toss salad until the dressing is evenly distributed. Serve with fresh strawberries.
Tip of the week: Always put the salad in the bottom of the salad bowl. This will keep the salad from getting soggy until ready to serve.
