Ingredients

1/4 cup diced onions
Diced Jalapenos - to taste
1/4 cup chipolte peppers in adobo sauce (canned)
1 pkg soy taco
1 can black beans drained and rinsed
1 cup corn - frozen

Baked tortillas
Spring Mix Salad
1 cup fresh cilantro
Reduced Fat Sour Cream
Reduced Fat Grated Cheese

Directions

In a skillet, combine first six ingredients over medium heat until heated completely. Spread baked tortillas on a plate, cover with spring mix salad and cilantro. Spoon soy taco mix on top and cover with cheese and dollop of sour cream. Enjoy!
