Salmon Salad with Dill Vinaigrette

Ingredients

Vinaigrette:
2 tbs chopped fresh dill
1 tbs honey
1/4 cup fresh lemon juice
1/8 tsp salt
1 tbs olive oil


Combine first five ingredients, whisk in oil. Set aside

Salad
8 oz Pre-Cooked Salmon (steamed, grilled however you prefer)
1 cup chopped red bell pepper
1 cup chopped cucumber
1/2 cup chopped red onion
1/4 cup chopped kalamata olives
1/4 tsp black pepper


Chilled Watermelon Soup
6 cups cubed seedless watermelon
1/2 cup dry white wine
2 tbs fresh lime juice
3/4 tsp salt
1/4 tsp hot pepper sauce

Directions

Combine first five ingredients, whisk in oil. Set aside

Flake Salmon, Add next five ingredients. Toss gently. Add viniagrette just before serving


Combine all ingredients in a food processor. Process until smooth. Place in refrigerator and chill for at least 2 hours.
