Ham Roll-Ups on a Stick

1 package skewers
1 eggplant, sliced in half lengthwise
1 small package grape tomatoes
1/2-lb. sliced smoked ham, sliced thin
1 small tub sun dried tomato cheese spread
1 small package Swiss cheese, cubed
1 package fresh basil
1 bottle vinegarette
Take 1 piece of ham at a time and generously spread the cheese spread over each piece. Roll tightly and cut in half at an angle. Using one skewer at a time, place 1 fresh basil leaf, 1/2 rolled ham, 1 cube of cheese and 1 grape tomato. Repeat process until all the ham is used. Place each skewer into the back side of the sliced eggplant. Serve with a bowl of vinegarette dressing for dipping.
