Blueberry-Banana Ice Cream Sandwiches

With the kids back in school, and the temperature dancing in the triple digits, I thought it would be fun to share a treat with you this week. This week's recipe will put a smile on even the biggest kid's face, and keep them cool all at the same time. Use your favorite fruit with this one and make it your own. Enjoy!

6 scoops vanilla ice cream, softened
1 cup fresh blueberries, rinsed and dried
2 medium bananas, smashed
12 large oatmeal cookies
Plastic wrap


Directions

In a microwave safe bowl, soften ice cream for 10 seconds in the microwave. *Repeat process until ice cream is creamy. In a large bowl, spoon in softened ice cream, blueberries and smashed bananas. Fold until mixed thoroughly. Using a spoon, spoon a generous amount of ice cream mixture onto the flat side of one oatmeal cookie. Spread ice cream mixture across the entire cookie, leaving about ½” of space from the sides. Top with a second oatmeal cookie and lightly press together. Wrap the ice cream sandwich firmly in a piece of plastic wrap and freeze for 1 hour. Makes the perfect summertime treat!
