1 cup powdered sugar
1/2 cup pineapple juice
1 butter cream cake, sliced
1-8 oz. tub three berry cream cheese, softened
1/2 cup fresh raspberries
1/2 cup navel oranges, diced
Sprig of fresh mint
In a small bowl, whisk together powered sugar and pineapple juice until slightly thickened. Set aside. In a small microwave bowl, heat cream cheese for 20 second on high. Using a spoon, gently fold in fresh raspberries and oranges. Mix until combined. Spread cheese mixture on one slice of cake. Top with another slice of cake. Cut in half and drizzle with pineapple glaze. Top with fresh mint.
