Southwest Chicken


2 Boneless Chicken Breast
1 16oz jar of Z's Creative Cuisine Corn Salsa
*Any corn salsa will do
1 Pkg Spanish rice
4 TBS Extra virgin Olive Oil
1/4 tsp. Cayenne pepper
1/4 tsp. Garlic powder
1/4 tsp Lemon Pepper


In a small sauce pan over low heat, heat salsa.

In a large skillet over medium-high heat cook chicken in olive oil. Season only one side of chicken and cook 5 to 6 minutes per side or until juices run clear. Cook rice according to the package directions. Spoon rice onto the center of a serving plate. Top rice with chicken and spoon salsa on top. Enjoy!
