Shrimp Newburg

Ingredients


  • 6 tablespoons butter
  • 6 tablespoons flour
  • 1 cup milk
  • 1/2 teaspoon black pepper
  • 1 small green bell pepper, finely chopped
  • 1 small onion, finely chopped
  • 3 ounces fresh sliced mushrooms
  • 1/3 cup Sherry
  • 4 tablespoons grated Parmesan cheese
  • 3 pounds shrimp, cleaned and cooked
  • 2 cups heavy cream, whipped
  • 8 pastry shells or tart shells

    Directions

    Melt butter in saucepan. Blend in flour gradually. Add milk slowly, stirring constantly. Sitr in salt, pepper, bell pepper, onion, mushrooms and Sherry. Heat for ten minutes and stir in Parmesan cheese. Just before serving, fold in shrimp and whipped cream. Serve in pastry shells or tart shells.
