Date Nut Orange Cake
Ingredients
1 stick butter or margarine
1 cup sugar
2 eggs
2/3 cup buttermilk
1 tsp. baking soda
2 1/2 cups all-purpose flour
1 tsp. Vanilla
2 tbsp. butter nut flavoring
4 tbsp. orange rind( about 6 oranges)
1 pkg. chopped dates
2 cups chopped pecans
Directions
1. Preheat oven to 350 degrees. Cream butter or margarine.
2. Add eggs blend ell. Add buttermilk and flour alternately. Mix after each addition.
3. Add baking soda, vanilla, butter nut flavoring and orange rind. Then stir in date and pecans.
Bake in greased and floured tube pan for 45-55 minutes.
Glaze:
1 cup powdered sugar
2 tbs. Orange rind
Add 2 or 3 tbs. orange juice at the time, until you have thin glaze and not paste that will soak into cake.
Put on while cake is warm. Cake is better is make a day or two ahead.
