- 1 3/4 cups fructose
- 3 cups oat flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 teaspoons cinnamon
- 1 package dry butter buds
1/3 cup canola oil
1/2 cup water
2 apples finely chopped with peeling
1 cup chopped strawberries (fresh or frozen)
#1: Raspberries may be substituted for strawberries.
#2: 1/2 cup chopped nuts
1/2 cup raisings
#3: 1/2 cup grape-nut cereal
1/2 cup dates or raisins
Stir together the first seven ingredients (fructose - butter buds).
Next, add the canola oil, water, apples and strawberries. Mix together. Pour caked batter into a non-stick sprayed pan. For a bundt pan bake approximately 50 minutes at 350 degrees. For muffins insert toothpick and test for doneness. While warm sprinkle with Nutra-sweet. Or glaze can be used. Store tightly for moistness. (May be frozen)

- 1 tablespoon low fat margarine
Dissolve fructose in microwave approximately 1 minute.
