Ingredients
- 1-1/2 lbs. small, red potatoes (quartered)
- 1/2 cup mayo
- 2 Tbsp. lime juice
- 1-1/2 tsp. grated lime zest
- 1/4 tsp. cayenne pepper
- 1/4 tsp. garlic powder
- 1/4 tsp. salt
- 1 cup grape or cherry tomatoes (halved)
- 1/2 cup red or green onion
- 1 cup celery, chopped
- 2/3 Tbsp. fresh cilantro
Directions
Cook potatoes in salted water until tender. Combine mayo, juice, zest, pepper, garlic powder, salt. Add potatoes, celery, onion. Sprinkle with cilantro and refrigerate. Add tomatoes right before serving and toss.
