  • 1 lb. Italian Sausage
  • 1/2 medium white onion, diced
  • 1 cup sliced mushrooms
  • 1/2 teaspoon garlic
  • 8 oz. of sour cream
  • 1 cup Monterrey Jack cheese
  • 3- 4 oz. cans chopped green chilies
  • 3 eggs
  • 1 cup milk


In a large skillet, cook sausage then sauté the onions and mushrooms with sausage. In a bowl combine eggs, milk, and sour cream and whisk until smooth. When sausage is browned, place in a square pan. Layer the sausage with green chilies. Top chilies with Monterry Jack cheese and top that with sour cream, egg, and milk mixture. Bake uncovered at 425 degrees for forty minutes. Cut and serve with salsa.
