Apple Spice Cake


  • 3 slices Mrs. Baird's Potato Bread
  • 1 large Granny Smith apple
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract


Trim crusts from bread. Cut each bread slice in half (top to bottom of bread>, then cut each half diagonally into two triangle shapes. Peel apple, cut into quarters, and remove core. Cut into thin slices (stem to root). Spray an 8-inch cake pan with vegetable oil spray. Arrange bread slices upright, about 2 inches apart. Arrange apple slices in between bread slices. Preheat oven to 350°. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, allspice, and ginger. Add the milk, egg, and vanilla, and whisk together until just blended. Pour mixture over bread and apples and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
