This is great with a side dish of Mexican rice or a salad!
1 lb. raw, peeled and deveined medium shrimp
1/4 tsp. cayenne pepper
1 tsp. minced garlic
juice of 1 lime
12 large flour tortillas
1 large red pepper, sliced
1 large onion, sliced
1/2 cup extra virgin olive oil
1 cup shredded or thinly sliced pepper jack cheese
In a large skillet, pour in olive oil and heat over medium-high heat. Add peppers and onions. Add seasoning and stir for 2-3 minutes. Add shrimp and stir for 2 minutes more. Shrimp is done when it turns bright pink. Spoon mixture on a plate and sprinkle with lime juice. Spoon 2 tablespoons of the shrimp mixture into a warm flour tortilla and top with cheese. Fold in half and serve hot.
