- 1/2 Cup Canola Oil (May use 1/4 Cup Olive Oil + 1/4 Cup Canola Oil)
- 1 Cup Fructose
- 1/4 Cup Egg Substitute or 2 egg whites
- 1 Teaspoon Vanilla
- 2 1/2 Cups Oat Flour
- 1 Teaspoon Salt or Salt Substitute
- 1 Teaspoon Baking Powder
- 1 Package Dry Butter Buds
Stir all ingredients together. Chill 1 hour.
Heat oven to 375'. Roll dough 1/8" thick on lightly floured board. Cut into desired shapes. Place on ungreased baking sheet. Bake 6 to 8 minutes until light brown. Sprinkle with Nutra-Sweet. (If using a dark cookie sheet cooking time may be less) Store in a sealed container to retain crispness.
Colored Cookies: Separate dough and add food coloring and flavorings before chilling.
May add lemon, lime, and orange juice or flavorings. Also peppermint, anise and roasted sesame seeds. Let your imagination work for you with this recipe.
