Sugar Free Orange Oatmeal Cake

Ingredients

Cake:


  • 1 1/2 c. Oat Flour
  • 1 1/4 c. Fructose
  • 1 1/2 c. Quick Oats
  • 1 1/2 t. Baking Soda
  • 1 t. Cinnamon
  • 1/2 t. Nutmeg
  • 1/2 c. Unsweetened Applesauce
  • 1 c. Unsweetened Orange Juice
  • 4 Egg Whites or Egg Substitute
  • 1/2 c. Chopped Raisins
  • Dash of Salt




    Frosting for Orange Oatmeal Cake:

  • 1/2 c. Fructose
  • 2-3 T. Unsweetened Orange Juice (enough to moisten fructose)
  • 1/3 c. Chopped Pecans
  • 2 T. Unsweetened Coconut
  • 8-10 Packages Nutra Sweet

    Directions

    Cake:


    Mix all ingredients together by hand. Bake in 9x12 nonstick sprayed pan at 350' approximately 20 to 25 minutes. Muffins are baked approximately 10 minutes or until toothpick test clean. While warm, spread the cake with the following frosting.



    Frosting:


    Stir together Fructose and orange juice. Microwave 30 seconds and stir. Continue microwaving at 5 second intervals until fructose is dissolved. Stir in coconut, pecans and Nutra Sweet. Spread on warm cake. Serve.
