Cathy's Chicken Casserole

Ingredients


  • 1 pound boneless, skinless chicken tenders
  • 2 small yellow squash, cubed
  • 1 small red pepper or 1/2 1 large red pepper, cubed
  • 1 medium green pepper, cubed
  • 1 small white onion, cubed
  • 1 package or box of seasoned croutons
  • 8 eggs
  • 1-1/2 cups of milk
  • 1 package of shredded cheddar and jack cheese, 2 cups
  • 1 package sliced, fresh mushrooms
  • 1/2 teaspoon lemon pepper
  • 1/2 teaspoon Emeril's Original Essence
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper

    Directions

    Spray a 9x13" pan with cooking spray. Pour crouton's over the bottom. Add vegetables and stir. Pour egg mixture over vegetables. Top with cheese. Cook on 375 for 45 minutes. Serve with Picante sauce and tostito chips.
