Caribbean Chicken

Ingredients


  • 3 Boneless skinless chicken breast
  • Juice from 1 lime
  • Teaspoon minced garlic
  • 1/3 cup water
  • 3 Tbsp. Honey
  • 2 Tbsp. Soy Sauce
  • 1/2 teaspoon coconut extract
  • 6 slices of pinapple
  • 1 tablespoon Flour
  • Coconut Flakes
  • Green Onion
  • Grated Lime peel
  • Pinch crushed red pepper

    Directions

    Saute pinapple in tablespoon of oil until brown. Rub chicken with garlic, sprinkle flour on top. Brown chicken in same skillet Mix water lime juice, soy sauce, honey, extract, red pepper. Pour into skillet. Simmer on medium to high heat until chicken is tender. Remove and serve. Garnish with coconut flakes, green onion, and lime zest.
