1 6 oz. jar marinated and quartered artichoke hearts
1 6.7 oz. box Uncle Ben's brown & wild rice, mushroom recipe
Greek Vinaigrette dressing
Salt & pepper
Preheat oven to 350. Spray a shallow baking pan. Wash hens under cold water and pat dry. Place in baking dish, breast side up. Thoroughly salt and pepper each hen. Stuff each hen with half of the marinated artichokes. Pour dressing over each hen until coated. Cook uncovered for 1 hour and 15 minutes, or until juices run clear. Cook rice according to package. Serve hens over a bed of wild rice. Serves two.
