Creole Chicken

Ingredients


  • 2 Tbl. butter
  • 2 cups mushrooms
  • 1 cup onion
  • 1/2 cup green pepper
  • 1/2 cup celery
  • 1 Tbl. minced garlic
  • 1 16oz. can diced tomatoes
  • 1/2 t. salt
  • 1/2 t. sugar
  • 1/2 t. thyme leaves
  • 1/2 t. hot sauce
  • 2 bay leaves
  • 4 cups cooked chicken pieces
  • 2 cups cooked rice

    Directions

    Melt butter in pan. Add mushrooms, onion, green pepper, celery and garlic and sautee over medium heat until onion is cooked, but other vegetables are still somewhat crunchy (about 3-5 min.). Add rest of ingredients and simmer for 15-20 minutes. Pour over cooked rice.
