Chocolate Meringue Pie


  • 1 1/2 c. fructose
  • 1/3 c. cornstarch
  • 1/2 t. salt or salt substitute
  • 3 c. non-fat milk
  • 1/2 c. egg white or egg substitute
  • 1/3 c. cocoa+1/4 c. water
  • 1 t. vanilla


  • 4 egg whites
  • 1 teaspoon cream of tarter
  • 1/4 c fructose
  • 8 packages nutra sweet
  • 1 t. vanilla


    In large microwave bowl, stir together fructose, cornstarch and salt. In another bowl, stir together eggs and milk. Stir into fructose mixture. Cook in microwave on high uncovered until mixture is thick about 5 minutes stirring occasionally. Mix together cocoa and water to make a paste. When mixture is thickened, add cocoa paste and mix together. Add vanilla. Pour into prepared pie crust and add meringue below.


    Beat egg whites and cream of tarter until foamy. Beat in fructose 1 tablespoon at a time. Continue beating until stiff and glossy. Do not under beat. Beat in vanilla and nutra sweet. Heap meringue onto pie filling. Spread carefully sealing meringue to edge of crust. Bake about 7 to 8 minutes in 450 oven until delicate brown.
