This salad is a meal for one person with fresh vegetables, fruits, cheese, and nuts. It's filling and satisfying. When in season, use fresh strawberries and other fruits. Sugar free canned or frozen fruits can be used. Use fresh spinach, apple, and broccoli and vary the fruits, nuts, and cheeses.
1 cup fresh spinach
4 sliced strawberrys
1/2 to 1 cup broccoli flowerets
1/2 diced apple
1/2 cup fat free cottage cheese or tablespoons feta cheese
