- 1 cup all-purpose flour
- pinch of salt
- 3 eggs
- 2 tablespoons melted butter
- 1/4 cup clarified butter, for frying
- 1 cup of milk (more may be needed)
- for sweet crepes add a tablespoon of sugar
Combine all ingredients, stirring in the milk until you get the consistency of thin crème. Let batter age for 30 minutes. Fry the crepes, pouring them into 7” circles.
