Living Lean: Sicilian Sweet and Sour Fish
Beth shows a Mediterranean treat that's great this time of year.

4 fillets of monk fish, snapper, flounder, halibut or sea bass
1/4 cup olive oil
1/3 cup red onion chopped
1 garlic clove pressed
2 TBSP red wine vinegar
1/3 cup sun-dried tomatoes - thinly sliced
3 TBSP raisins plumped in hot water - red or golden - either one (save liquid)
3 TBSP fresh mint
salt and pepper to taste.
Saute onions and garlic in a non-stick skillet until tender and caramelized. Add sun-dried tomatoes, raisins, mint and vinegar. Stir until warm thru. Add fish fillets.Cover and cook for 8 - 10 min.
Serve over rice or couscous.
