Eggs a la Nika!

Ingredients
1 small carton of Garden Vegetable Egg Beaters
1 cup red bell pepper, diced
2 green onions, diced
1 large Roma tomato, diced
1 cup frozen spinach
1 cup shredded cheddar cheese
Zeis Spice:
1/4 tsp. garlic powder
1/4 tsp. lemon pepper
1/4 tsp. cayenne pepper
*salt to taste
cooking spray
Directions
In a large skillet over medium heat, saute all vegetables for 2 minutes or until spinach is thawed. Add Egg Beaters and stir to incorporate. Stir every 15 seconds. After 1 minute, add cheese. Cook for 2 to 3 minutes or until eggs are fluffy. Serve hot with Chef Cathy's Awesome Salsa and garlic rounds.
