1 box of pasta
Salt to taste
1 cup of cherry tomatoes; sliced
1/4 of a cup Kalamata olives; diced
1/4 of a artichoke hearts; diced
1/2 of a red onion; diced
2 chicken breasts; shredded (I like to use a rotisserie chicken)
Juice of half a lemon
Red pepper flakes
1/2 of a cub Feta cheese crumbles
Cook pasta according to instructions using half chicken broth, half water and a pinch of salt.
Strain and toss in the following 5 ingredients
Squeeze in the lemon juice, drizzle with police oil and sprinkle in a few red pepper flakes and a pinch of salt.
Top with feta cheese.
Serve and enjoy!
